Preparation:

Selected mangoes are ripened under controlled atmospheric conditions. Completely ripened mangoes are washed, blanched, pulped, deseeded, centrifuged, homogenized, concentrated and then processed. The preparation process also involves cutting, de-stoning, refining and packaging.

Preservation and Storage:

  • Put the mango pulp in a plastic bag and place it in the freezer. This will make it last for months and one can use it whenever they want to in milkshakes, chutneys and desserts.
  • Cook the mango pulp with salt and sugar for 10 minutes and add a little cardamom powder. Preserve in the refrigerator.
  • The mango pulp should be stored at ambient temperature below 25° Celsius and not below 4° Celsius.
  • Exposure to higher temperatures and sunlight should be avoided.
