Because of its high moisture content, mozzarella cheeses are used within hours of its making. Here are some steps you can follow to make fresh mozzarella.

1. To 1 gallon of cold milk, add one and half tsp. of diluted citric acid and after heating it slowly to around 90 F, remove it from the burner.

2. Dilute rennet in ¼ cup cool water and add 1/4th tsp of it to the mixture prepared above. Cover it and leave it undisturbed for around 5 minutes so that the curd is formed.

3. Check if the whey in the curd becomes clear and the curd itself should look like custard. If not, then let it set for few more minutes.

4. Cut the curd into small cubes with a knife.

5. Place the pot back on burner and heat it while stirring slowly to 105F.

6. Now, remove it from the burner and continue stirring it slowly upto 5 minutes. Transfer the curd to a bowl. As the whey begins to drains, the curd must get firmer.

7. Continue separating the whey from the curd by pressing the curd gently. Knead and reheat until all of whey has been drained out.

8. Now, knead the curd as you knead the dough for bread. If required, put it in the microwave.

9. It should now begin to stretch from this point. Continue stretching it.

10. Lastly, knead it into a big ball until it becomes smooth.
