Raspberry Coffee Cake

Coffee cake as the name implies is a coffee flavored cake. These cakes are light, rich and have a wonderful texture. Coffee cakes can be made with varied icings and taste particularly delicious when served straight from the oven. You can add your own choice of fruits and nuts to the coffee cake to make it even more interesting.

It can be the perfect accompaniment on a particularly damp and rainy day.

  • 2-1/2 cups flour
  • ¾ cup sugar
  • ¾ cup butter
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 egg
  • ¾ cup buttermilk
  • ½ teaspoon salt
  • ¾ cup raspberry preserves.
  • ½ teaspoon vanilla
  • 1-1/2 cups powdered sugar (confectioner's sugar)
  • Lemon juice
Instructions
  1. Equipment: Greased springform pan (approximately 9" round and 2"high)

  4. Process: Preheat the oven to a temperature of 350 degrees. In the large mixing bowl take the flour and mix it well with baking soda, baking powder, salt and sugar. Now put the butter in the contents and mix. Make some space in the center of the contents and add the buttermilk and egg into the mixture and stir. Spread this batter in the greased baking pan. Spread the raspberry preserves on the dough. Leave a border of around 1-1/2". Bake this at the temperature of 350 degrees for 35 to 40 minutes. Cool the pan on the baking rack. Now in a small bowl mix the vanilla, powdered sugar and lemon juice so that a liquid of drizzling consistency is obtained. Remove the cake from the springform pan and drizzle this glaze over the cake. Serve warm.
